Brook Trout Amandine


  • 4 - 6 brook trout
  • Butter,
  • Lemon, sliced thin
  • Thyme
  • Sliced almonds
  • 2 lrg Burdock Leaves - Substitute aluminum foil for burdock leaves if necessary
  • Parsley


  1. Soak burdock leaves for 15 minutes in clean water
  2. Wrap fish in wet leaves
  3. In saucepan, brown slivered almonds in butter, set aside
  4. In wet leaves smear 2tbs butter on center of 1st leaf
  5. Lay fish on buttered leaf
  6. Lay several pats of butter (2tbsp) on top of fish
  7. Sprinkle thyme on fish
  8. Spread browned almonds on top and close leaf
  9. Wrap remaining wet leaves around 1st leaf
  10. Lay on hot coals (no direct fire)
  11. Cook for 8 minutes, then flip over using gloves or spatula – be careful not to let leaves unravel.
  12. Cook another 8 minutes
  13. Remove, plate and garnish with parsley leaves
