Chukar Partridge in Almond-Orange Cream Sauce - Gluten & Dairy Free!

Ingredients

  • 4 breasts of partridge (8 pieces)
  • Almond milk
  • Cointreau
  • Shitake mushrooms
  • Tarragon
  • Chicken stock
  • Rice cracker crumbs
  • 2 eggs
  • Sesame oil

Instructions

  1. Reduce 2 cups chicken stock by half
  2. Simmer 4 oz. shitake mushrooms
  3. Add 1 cup of almond milk
  4. Reduce to ½
  5. Add 2 tbsp Cointreau or comparable orange flavored liquor
  6. Heat ½ cup sesame oil to medium in saute’ pan
  7. Beat eggs to create egg wash
  8. Place 1 cup of rice cracker crumbs in bowl beside egg wash
  9. Bathe partridge breasts in egg wash
  10. Roll breasts in rice cracker crumbs
  11. Brown breasts in sesame oil
  12. Remove and set aside
  13. Sprinkle tarragon on breasts
  14. Place in casserole dish on top of sauce
  15. Bake 10 minutes @ 350 degreees
  16. Recommend plating w/ vegetable of choice and mashed squash
