Maple Teriyaki Glazed Smoked Salmon

Ingredients

  • 1 large side of salmon
  • Maple syrup
  • Teriyaki sauce
  • Apple wood chips
  • Dark porter beer
  • 1 med onion
  • 4 cloves garlic
  • Whole black pepper
  • 1 Serrano or 2 chili peppers w/ seeds

Instructions

  1. Mix ½ cup of maple syrup w/ ½ cup of teriyaki
  2. Marinate salmon fillet in syrup/teriyaki mixture for ½ hour skin side up
  3. Bring smoker up to 220 degrees
  4. In water pan fill w/ ½ water
  5. Add 2 porter beers
  6. 1 Med onion quartered
  7. 4 cloves of garlic halved
  8. 1 tbsp whole black pepper
  9. 1 serrano or 2 chili peppers crushed w/ seeds
  10. Bring water to steaming in smoker
  11. Add teriyaki maple syrup to water pan
  12. Add apple wood chips
  13. Smoke for 45 – 60 minutes adding more chips whenever smoke stops
  14. Check fillet – if it doesn’t flake and if it’s no longer opaque in the middle – it’s done.
  15. Remove fillet
  16. Brush off excess fat with basting brush
  17. Set aside in cool area with no cats around
  18. Remember smoking is as much an art as it is a science.
