Smoked Brook Trout Spread

Ingredients

  • 4 brook trout
  • 3 blocks cream cheese
  • Lemon
  • Salt & pepper
  • Brine
  • Apple or cherry wood chips
  • Sage leaf
  • Brine
  • ½ cup brown sugar
  • ½ cup kosher salt
  • 1 tbsp pickling spices
  • ½ gl water
  • Mix salt, sugar and pickling spices in water and place in freezer bag
  • Add field dressed trout and seal bag for 24 hours

Instructions

  1. Remove fish from brine and air-dry (or use fan) on raised grill with flanks splayed out to allow for air to circulate around inside
  2. Bring smoker up to 220 degrees
  3. Fill water pan ½ full
  4. Add 2 porter beers
  5. 1 Med onion quartered
  6. 4 cloves of garlic halved
  7. 1 tbsp whole black pepper
  8. 1 serrano or 2 chili peppers crushed w/ seeds
  9. Bring water to steaming in smoker
  10. Add wood chips
  11. Smoke for 45 – 60 minutes adding more chips whenever smoke stops
  12. Remove fish from smoker and let cool
  13. Remove skin from fish and flake off meat with fork being very careful not to include bones
  14. Crush fish with fork until no flakes remain
  15. Add room temperature cream cheese
  16. Add 4 cloves minced garlic
  17. Add juice of ½ lemon
  18. Add salt & pepper to taste
  19. Mash with fork until fully blended – this should be somewhat difficult at first
  20. Form spread into dome-shaped sphere
  21. Garnish with crushed sage leaf
  22. Surround with table water crackers
